A fusion of savory chaffles (cheese waffles) and tacos, packed with omega-3 fatty acids and fiber.
Ingredients (Serves 2): 2 large eggs
1 cup shredded mozzarella (or dairy-free alternative)
1 ripe avocado
6 oz smoked salmon (or grilled salmon slices)
1 tbsp Greek yogurt (or coconut yogurt)
Fresh cilantro, lime wedges, and a pinch of chilli flakes for garnish
Instructions:
Make the Chaffles:
Preheat a waffle maker.
In a bowl, whisk eggs and mix with shredded mozzarella. Spoon the mixture into the waffle maker and cook until crispy.
Let cool slightly, then cut each chaffle into “taco shell” halves.
Prepare the Filling:
Mash the avocado with lime juice, a pinch of salt, and chilli flakes.
Spread the avocado mash onto each chaffle.
Top with smoked salmon slices and a dollop of Greek yogurt.
Assemble and Serve:
Garnish with cilantro and serve with lime wedges.
