How to Make Truffle Risotto

1. Warm the broth

Pour the vegetable broth into a saucepan and keep it at a bare simmer over low heat. Cold broth stalls the pan every time you add it, and a stalled pan will not release starch evenly. This is the least glamorous step and the one that quietly decides the texture.

2. Brown the mushrooms

Heat one tablespoon of olive oil and one tablespoon of butter in a wide, heavy pan over medium-high heat. Add the mushrooms in a single layer and — this is the hard part — leave them alone for two minutes. Then cook another four to five minutes until the edges are deeply golden. Season lightly with salt and pepper.

Move about a third of them to a plate. Those are for the top, and they will be the best-looking thing on the plate.

3. Cook the aromatics

Lower the heat to medium. Add the remaining olive oil and the shallot, and cook for three minutes until translucent but not coloured. Add the garlic and give it thirty seconds — just to the point where you can smell it from a step back.

4. Toast the rice

Add the rice straight to the pan and stir continuously for two minutes, coating every grain. The edges should turn slightly translucent while the centres stay opaque. Toasting is what keeps the grains intact through twenty minutes of stirring.

Do not rinse the rice. That surface starch is the entire sauce.

5. Deglaze with white wine

Pour in the wine and stir until it has almost completely disappeared, roughly two minutes. Use something dry — Pinot Grigio, Sauvignon Blanc, an unoaked Chardonnay. Sweet wine concentrates into something cloying by the end, so keep it crisp.

6. Add the broth gradually

One ladle at a time. Stir frequently, let most of it absorb, then add the next. Keep the pan at a gentle simmer, never a hard bubble.

Expect 18 to 22 minutes. The rice is ready when it is tender and creamy with a distinct firmness still at the centre.

7. Finish with butter and Parmesan

Pull the pan off the heat while the risotto still looks slightly too loose. Add the remaining two tablespoons of butter and the grated Parmesan, and stir hard for about a minute. This is mantecatura, and it is the difference between rice in sauce and actual risotto.

8. Add the truffle

Stir in one teaspoon of truffle paste or oil. Taste before you reach for more. Truffle should arrive as an aroma, not a flavour that flattens the mushrooms and Parmesan underneath it.

Adjust the salt and pepper now, not before.

9. Serve immediately

Spoon into warm, shallow bowls and tap each one gently against the counter so the risotto settles into a loose pool. Top with the reserved mushrooms, more Parmesan, parsley or chives, and shaved truffle if you have it. A few drops of oil, no more.
