How to Make Dairy Free Marry Me Chicken
1. Prepare the chicken
Place the chicken breasts on a cutting board. If they are especially thick, slice them horizontally into thinner cutlets or gently pound them until they have an even thickness.
Pat the chicken dry with paper towel. Season both sides with salt, pepper, garlic powder and paprika. Dust lightly with flour and shake off the excess.
The flour encourages browning and later helps the sauce cling to the chicken.
2. Sear until golden
Heat the olive oil in a large skillet over medium high heat.
Add the chicken without crowding the pan. Sear for four to five minutes on the first side without moving it. Turn and cook for another three to four minutes.
The chicken does not need to be completely cooked at this stage. Transfer it to a clean plate and keep the flavourful browned bits in the skillet.

3. Build the aromatic base
Reduce the heat to medium. Add the shallot and cook for two to three minutes, until softened.
Stir in the garlic, oregano, thyme and red pepper flakes. Cook for approximately 30 seconds, just until fragrant.
Add the tomato paste and cook for one to two minutes. It should deepen in colour and begin caramelising against the pan.
4. Deglaze the skillet
Pour in the white wine or ½ cup of additional chicken broth.
Use a wooden spoon to scrape the browned pieces from the bottom of the skillet. Simmer for three to four minutes, until the liquid has reduced by approximately half.
5. Create the dairy free cream sauce
Add the chicken broth, coconut milk, cashew cream, sun dried tomatoes, nutritional yeast and Dijon mustard.
Whisk gently until smooth and bring the sauce to a low simmer. Avoid boiling it aggressively, which may cause the coconut milk to separate.
Taste the sauce before adding more salt. The broth and sun dried tomatoes may already contain plenty.
6. Finish cooking the chicken
Return the chicken and any collected juices to the skillet. Spoon some of the sauce over each piece.
Reduce the heat to medium low, partially cover the skillet and simmer for eight to twelve minutes. Cooking time will depend on the thickness of the chicken.
The centre of each breast must reach 74°C, or 165°F, when tested with a food thermometer.
7. Add the spinach and lemon
Transfer the cooked chicken to a serving plate.
Stir the spinach into the sauce and cook for one to two minutes, until wilted. Add the lemon juice and half of the fresh basil.
If the sauce is too thick, add a splash of chicken broth. If it is too thin, simmer it uncovered for several minutes.
Return the chicken to the skillet and spoon the finished sauce over the top.
8. Garnish and serve
Finish with fresh basil, dairy free Parmesan, black pepper and a few crushed red pepper flakes.
Serve immediately while the sauce is silky and warm.
How to Prevent a Strong Coconut Flavour
